Ingredients

The ingredients are:
  • 1 1/4 cups sugar (white)
  • 1/2 cup shortening
  • 2 large eggs
  • 1 tablespoon lemon juice
  • 1 cup mashed bananas (ripe, about 2 medium)
  • 1 1/2 cups flour (sifted)
  • 1/2 teaspoon mace
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 cup water
  • 4 ounces nuts, chopped (about 3/4 cup), (walnuts or pecans, optional)
  • 3 ounces semi-sweet chocolate chips ( about 1/2 cup), optional

How to Make

  • Step 1: Preheat the oven to 350F.

  • Step 2: Prepare a Bundt pan by spraying liberally with nonstick baking spray - set aside.

  • Step 3: In a large mixing bowl, cream sugar and shortening.

  • Step 4: Add the eggs, lemon juice and mashed bananas - mix well.

  • Step 5: Soft together the flour, mace, baking powder and baking soda.

  • Step 6: Add the water then the flour mixture to the mixing bowl and incorporate well.

  • Step 7: Fold in the nuts and/or the chocolate chips if desired.

  • Step 8: Bake for 30 minutes or until the top is brown and toothpick comes out mostly clean.

  • Step 9: Remove from the oven , place the pan on the wire rack and let the bread cool in the pan for about 15 minutes.

  • Step 10: Invert the bread onto the wire rack and cool on the rack.
