Ingredients

The ingredients are:
  • 8 ounces dry rice (= 1 cup, cooked yields 2 cups cooked rice)
  • 1⅓ cup skim milk
  • ⅛ teaspoon salt
  • 4 tablespoons sugar
  • 1 tablespoon butter (soft)
  • 1 teaspoon vanilla
  • 2 eggs
  • ½ teaspoon grated lemon rind
  • 1 teaspoon lemon juice
  • ⅓ cup raisins (seedless raisins or finely chopped pitted dates)

How to Make

  • Step 1: Once the rice is cooked, add the next 6 ingredients to it.

  • Step 2: Add the lemon rind, juice, and raisins (or dates) and combine lightly with a fork.

  • Step 3: Put the rice mixture into a greased baking dish and bake until set in a preheated 325' F. oven, about 50 minutes.
