Step 1: Cook carrots in boiling water until just firm but fork-tender (do not cook until very soft) drain then plunge into ice water. Drain then pat dry lightly using paper towel/s (at this point you may refrigerate until ready to glaze.
Step 2: When ready to serve heat the carrots in the microwave until fairly hot, then transfer to a saucepan; over low heat stir in the butter, both sugars, cinnamon and salt; cook stirring over low heat until hot bubbly and glazy Season with pepper.
