Step 1: Preheat oven to 180°C (350°F).
Step 2: Place the butter, half the coriander, half the onion, and 2 tablespoons of the Tabasco in a bowl, sprinkle with salt and pepper, mix to combine and set aside.
Step 3: Carefully loosen the chicken skin with your fingers and push the butter mixture under the skin and secure the legs with kitchen string, brush the chicken with oil and sprinkle with salt and place on a lightly greased large oven tray and cook for 1 hour or until the chicken is golden and cooked through.
Step 4: Place the oil, pine nuts and remaining coriander, onion and Tabasco in a small bowl and mix to combine and serve with the chicken.
