Ingredients

The ingredients are:
  • 2 teaspoons white vinegar
  • 8 eggs
  • FOR BEARNAISE SAUCE
  • 1 tablespoon white wine vinegar
  • 1 tablespoon white wine
  • 1 tablespoon finely chopped fresh tarragon
  • 4 whole peppercorns
  • 1/2 cup butter (salted)
  • 4 egg yolks
  • 2 teaspoon lemon juice
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper (pinch each)
  • 4 (228 grams) English muffins (split, toasted and buttered)
  • 1 cup arugula

How to Make

  • Step 1: Fill saucepan with enough water to come 3 inches up side; stir in vinegar and bring to gentle simmer. Break cold egg into small dish or saucer. Holding dish just above simmering water, slip egg into water. Repeat with remaining eggs. Cook, in barely simmering water, for 3 to 5 minutes or until whites are set and yolks are cooked as desired.

  • Step 2: Remove eggs with slotted spoon; drain well on paper towel.

  • Step 3: For the Béarnaise Sauce:

  • Step 4: In small saucepan, cook white wine vinegar, wine, half of the tarragon and peppercorns over medium-high heat for 3 to 5 minutes or until reduced to 1 tablespoon. Strain and set aside.

  • Step 5: In small saucepan, heat butter over medium-high heat until melted and bubbling.

  • Step 6: Meanwhile, combine egg yolks, tarragon mixture, lemon juice and Dijon mustard in blender; purée until smooth.

  • Step 7: While blending, pour bubbling butter into blender. Season with salt and pepper to taste. Stir in remaining tarragon.

  • Step 8: Place two lightly toasted English muffin halves on each of four plates. Top each muffin with arugula, poached egg and Bearnaise sauce. Serve immediately.
