Ingredients

The ingredients are:
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 teaspoons baking powder
  • 1½ teaspoons baking soda
  • 4 eggs
  • 1 cup oil (cooking oil)
  • 1.8 ounces carrots (raw, grated = 2 cups)
  • 1 can (8 ounces) crushed pineapple (undrained)
  • 4.4 ounces walnuts, chopped (English walnuts or pecans or black walnuts = 1 cup)
  • FOR CREAM CHEESE FROSTING
  • 3 ounces cream cheese
  • 1/4 pound butter (= 1 stick)
  • 2 to 3 cups powdered sugar
  • 1 teaspoon vanilla extract

How to Make

  • Step 1: Mix all of the carrot cake ingredients together and bake in two greased and floured 9-inch pans at 350' F. for 1 hour.

  • Step 2: When cool, frost with cream cheese frosting (see below) or buttercream frosting.

  • FOR FROSTING

  • Step 3: Cream the cream cheese and butter together with electric mixer. Beat in 2 to 3 cups of powdered sugar and the teaspoon of vanilla. Beat till fluffy.
