Step 1: Melt butter over medium heat in a saute pan. Swirl the pan occasionally to be sure the butter is cooking evenly.
Step 2: As the butter melts, it will begin to foam. The color will progress to a toasty-brown. Once you smell that nutty aroma, take the pan off the heat.
Step 3: Transfer the browned butter to a medium mixing bowl and allow to cool until it solidifies slightly. Cream butter, sugars and salt in a mixing bowl until light and fluffy.
Step 4: Mix in whole egg, egg yolk and vanilla.
Step 5: Combine flour and baking soda then mix them with the batter.
Step 6: Add the chocolate chips and stir well.
Step 7: Scoop your batter into balls and place on non-stick baking sheet. Chill thoroughly for at least an hour (preferably overnight).
Step 8: Bake at 350F until your cookies are a nice golden brown on the edges but still soft in the center (about 7-10 minutes).
Step 9: Remove to a baking rack and allow to cool.
