Step 1: Heat the olive oil in a large pan on medium-high heat until hot; add the scallops to the pan in a single layer.
Step 2: Season scallops with salt and pepper and fry for 2-3 minutes on one side until golden brown, then flip and fry other side for 2 minutes until lightly browned and cooked through then remove from skillet.
Step 3: Add 2 tablespoons of butter to the pan, scraping up any browned bits left over from the scallops. Add in the minced garlic and cook for 1-2 minutes.
Step 4: Pour in wine and bring to a simmer. Reducing the liquid by about half (about 2 minutes) Add the remaining tablespoon of butter and lemon juice and stir.
Step 5: Remove the pan from heat and add the scallops back into the pan to warm through slightly. Garnish with parsley and chives.
Step 6: Serve over pasta or whatever is your preference.
