Ingredients

The ingredients are:
  • 3 eggs
  • 345 grams caster sugar
  • 250 ml oil
  • 1 teaspoon vanilla extract
  • 300 grams self-raising flour (sifted)
  • 60 ml strawberry jam
  • 300 grams apples (peeled and sliced, granny smith apples specified)
  • 1 tablespoon cinnamon sugar (see note)
  • 1 tablespoon caster sugar (for sprinkling)

How to Make

  • Step 1: Preheat the oven to 180C.

  • Step 2: Line a 24cm round springform cake tin.

  • Step 3: Using an electric mixer, beat the eggs and caster sugar until pale and creamy and then ad the oil and vanilla and beat until just combined and then using q spatula gently fold in the flour.

  • Step 4: Pour ha=f of the batter into the prepared tin, then dot with the strawberry jam and cover with half of the sliced apple and then sprinkle with the cinnamon sugar and top with the remaining batter then the remaining apple slices and finally, sprinkle over the tablespoon of caster sugar.

  • Step 5: Bake for one hour then reduce the temperature to 160C (325°F/Gas 3) and bake for a further 30 minutes or until deep golden and a skewer inserted into the centre comes out clean.

Don't forget the following tips and variations.
  • Note: To make cinnamon sugar, combine 230g caster sugar with two tablespoons of ground cinnamon. Store in an airtight jar and use as needed.
