Step 1: Preheat the oven to 180C.
Step 2: Line a 24cm round springform cake tin.
Step 3: Using an electric mixer, beat the eggs and caster sugar until pale and creamy and then ad the oil and vanilla and beat until just combined and then using q spatula gently fold in the flour.
Step 4: Pour ha=f of the batter into the prepared tin, then dot with the strawberry jam and cover with half of the sliced apple and then sprinkle with the cinnamon sugar and top with the remaining batter then the remaining apple slices and finally, sprinkle over the tablespoon of caster sugar.
Step 5: Bake for one hour then reduce the temperature to 160C (325°F/Gas 3) and bake for a further 30 minutes or until deep golden and a skewer inserted into the centre comes out clean.
