Ingredients

The ingredients are:
  • 1½ cup chopped onion (= 1½ large onions)
  • 2 large garlic cloves, finely minced
  • 6 ounces mushrooms, coarsely chopped
  • 3 tablespoons sherry (not cooking sherry)
  • 1 tablespoons butter
  • 4 cups broccoli (large broccoli stalks stems and florets, chopped, about 2 large stalks)
  • ½ pound spinach, chopped (2 cups, packed)
  • ½ teaspoon herb mix (see below)
  • 16 ounces low-fat cottage cheese (2 cups)
  • 1 teaspoon oregano (crushed leaves) or to taste
  • 4 ounces shredded low-fat mozzarella cheese (about 1 cup)
  • 3 tablespoons freshly grated Parmesan
  • ¼ cup chopped fresh parsley
  • 2 eggs
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 3 cups tomato sauce
  • 8 ounces dry lasagne noodles (cooked al dente and spread on foil or wax paper until ready to put in casserole)
  • FOR HERB MIX
  • ½ teaspoon cayenne
  • 1 tablespoon garlic powder
  • 1 teaspoon ground basil
  • 1 teaspoon ground thyme
  • 1 teaspoon ground parsley
  • 1 teaspoon ground savory
  • 1 teaspoon ground mace
  • 1 teaspoon ground sage
  • 1 teaspoon ground onion powder
  • 1 teaspoon freshly ground black pepper

How to Make

  • Step 1: In large skillet, sauté onion, garlic, and mushrooms in sherry and butter until vegetables are soft.

  • Step 2: Add chopped broccoli, spinach, herb mix, and oregano.

  • Step 3: Stir to combine ingredients, reduce heat, cover skillet, and simmer about 5 minutes or until broccoli is tender but still crisp.

  • Step 4: In medium bowl combine cottage cheese, Parmesan, mozzarella, parsley, eggs, salt, and pepper.

  • Step 5: Spread ½ cup of the tomato sauce on bottom of greased pan, about 13"x9"x2". Layer the lasagne by arranging 3 strips of noodles on the bottom, spreading half of the cheese mixture over them, then half of the vegetable mixture and 1 cup of tomato sauce.

  • Step 6: Repeat, starting from the noodles and ending with 1 cup of tomato sauce.

  • Step 7: Finally, put on a layer of noodles and top with the remaining ½ cup of tomato sauce.

  • Step 8: Sprinkle with more Parmesan if desired.

  • Step 9: Bake at 375' F. for 25 minutes.

  • Step 10: Let stand 10 minutes.
