Ingredients

The ingredients are:
  • 1 1/4 pounds shrimp
  • 1 onion, thinly sliced (medium onion)
  • 1/8 teaspoon minced garlic (to taste)
  • 1/8 teaspoon cayenne
  • 1/8 teaspoon turmeric
  • 1½ teaspoon salt
  • 2 cinnamon sticks
  • ½ teaspoon ground ginger or 2 whole ginger roots
  • 1¼ cup milk (nonfat milk can be used)
  • 2 tablespoons oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon sugar
  • 1 teaspoon curry powder
  • 1 tablespoon cornstarch
  • 1 1/3 cups cooked rice (hot fluffy rice)

How to Make

  • Step 1: In large skillet combine shrimp, half the onion, the garlic, cayenne, turmeric, salt, cinnamon, ginger, and 1 cup of milk.

  • Step 2: Cover and simmer gently 10 minutes.

  • Step 3: In small skillet sauté remaining onions in oil till tender.

  • Step 4: Stir in lime juice, sugar, curry and add to shrimp mixture.

  • Step 5: Combine cornstarch and remaining milk, then add, stirring constantly, till thick.

  • Step 6: Discard cinnamon sticks and ginger roots.

  • Step 7: Serve over the rice.
