Step 1: Combine the ice cream, milk, extract and food coloring in a blender, and blend on High speed for several seconds or until smooth but still a thickened consistency.
Step 2: Divide the mixture among two (12-oz) parfait glasses. Add a generous dollop of whipped cream on top and garnish with a maraschino cherry. And if desired, sprinkle a generous pinch of green sugar sprinkles on top. Add a straw to each glass, and serve immediately.
