Ingredients

The ingredients are:
  • 750 grams chicken wings (1 1/2 pounds fresh)
  • 1 tablespoon plain flour
  • 1 tablespoon curry powder (mild)
  • 1 tablespoon butter (or oil or ghee, more or less may be needed)
  • 1 onion (1 x 150 gram brown onion, roughly chopped)
  • 1 cup chicken stock
  • Salt seasoning, to taste (pinch)
  • Pepper, to taste (seasoning to taste)
  • 250 grams potatoes (red potatoes, peeled & cubed)
  • 60 grams carrots, sliced (3 large fresh carrots)
  • 1 lemon, sliced (1 x 60 gram lemon, fresh)
  • 100 grams papadums (to serve)

How to Make

  • Step 1: Combine the flour and curry together & toss the chicken wings into the flour mix, mix through coating the wings in flour mix.

  • Step 2: Melt butter in a large saucepan and gently brown the wings with onions (do not go as far as to brown the onions). Careful not to let the wings catch.

  • Step 3: When wings are just brown add the stock, seasoning, potatoes and carrots and bring to the boil; Reduce the heat and gently simmer for approximately 45 minutes or until the potato's are tender and chicken wings are cooked.

  • Step 4: Serve with the papadum's and sliced lemon.
