Ingredients

The ingredients are:
  • 2 1/2 pounds whole wheat bread (about 3 loaves)
  • 1/2 pound fresh celery, chopped
  • 1/2 pound onions, chopped
  • 1/2 pound butter
  • 1 1/2 liters chicken broth
  • 1/2 tablespoon salt
  • 1/2 tablespoon poultry seasoning
  • 1/2 tablespoon pepper, freshly ground
  • 1/2 tablespoon dried thyme, rubbed (or you can use ground thyme)
  • 1/4 cup fresh parsley, chopped (or 2 tablespoons dried parsley)

How to Make

  • Step 1: Preheat the oven to 350f degrees. Cube the bread, medium cube, into a large bowl.

  • Step 2: Saute the celery and onions in the butter until onions are light yellow, about 10 to 15 minutes. Pour the sauteed veggies/butter mixture over the bread; toss gently.

  • Step 3: Combine chicken stock, salt , poultry seasoning, pepper and thyme, and parsley; whisk to moisten seasonings; pour over bread mixture; Mix lightly but thoroughly, avoid over mixing.

  • Step 4: Place mixture in 2 well greased 9 x 13 roasting pan. For a crisp top bake in a 350f degree oven on the middle rack, for 1 1/2 to 2 hours untill well browned and the top is crisp. For a less crisp dressing bake only 1 1/2 hours.
