Ingredients

The ingredients are:
  • 6 boneless and skinless chicken breast (pounded to about half their size, do not pound to thin)
  • 1 1/2 to 2 cups Kittencal's DRY Seasoned Breadcrumbs (or use your own recipe for seasoned dry breadcrumbs) -- recipe here kittencals-italian-seasoned-breadcrumbs
  • 2 large eggs, lightly beaten with 1 tablespoon water
  • 12 thinly sliced smoked ham slices
  • 6 large Swiss cheese slices (or can use mozzarella cheese)

How to Make

  • Step 1: Preheat oven to 400 degrees F. Grease a 13 x 9-inch baking dish. Set oven rack to lowest position (for crispier chicken place onto a baking rack fitted into a baking pan or baking sheet).

  • Step 2: Place the seasoned crumbs and Parmesan cheese in a shallow bowl. Whisk together the eggs and 2 tablespoons water in another shallow bowl.

  • Step 3: Dip chicken in egg mixture allowing excess to drip off, then coat in breadcrumb mixture pressing down with fingers to adhere the coating to the chicken. Transfer to baking pan. Repeat with remaining chicken.

  • Step 4: Bake for 25 minutes or until chicken is done (cooking time will depend on how thick the chicken breast is). Remove from oven top each breast with 2 ham slices and 1-2 Swiss cheese slice; return to oven to bake 7-8 more minutes or until cheese melts and the ham is hot.
