Step 1: Beat egg yolks until thick and lemon colored.
Step 2: Add lemon juice and rind, sugar, salt, flour, butter, and milk.
Step 3: Fold in egg whites, beaten stiff.
Step 4: Pour into unbaked pastry shell (with edges fluted) and bake in hot oven (450 degrees F) 10 minutes
Step 5: Reduce heat to moderate (350 degrees F) and bake 20 minutes longer.
Step 6: Until silver knife comes out clean
