Ingredients

The ingredients are:
  • 1 box (8 ounce) dry lasagna noodles
  • 1 1/2 pounds Italian sausage (sweet)
  • 1 pound mozzarella cheese (sliced, whole milk)
  • FOR SAUCE
  • 2 tablespoons olive oil (extra virgin)
  • 1 cup onions, chopped
  • 2 cloves garlic, chopped
  • 1/4 cup flat-leaf parsley, chopped
  • 1 can (28 ounce) crushed tomatoes (Italian)
  • 1 can (6 ounce) tomato paste
  • 1/4 cup oregano, minced (fresh, after taking leaves off stem , or use dried about a teaspoon)
  • 1/2 cup basil, chopped (fresh)
  • 2 teaspoons sea salt
  • 3/4 teaspoons black pepper
  • FOR CHEESE MIXTURE
  • 1 pound ricotta cheese (whole milk)
  • 1 cup parmesan cheese, grated
  • 2 eggs, beaten
  • 1/4 cup parmesan cheese, grated (for garnish)

How to Make

  • Step 1: Preheat the oven to 400 degrees F

  • Step 2: Position the oven rack in the middle. Soak lasagna noodles in hot tap water 20 minutes

  • Step 3: Then dry them in paper towels while you cook your sauce

  • Step 4: TO MAKE THE SAUCE:

  • Step 5: Heat the olive oil in a large saucepan, add chopped onion. Cook over medium-low heat until translucent (about 5 minutes). Add the garlic and stir for one more minute.

  • Step 6: Add tomato paste, dont burn ,stirring constantly

  • Step 7: Add the crushed tomatoes, oregano, basil, sea salt, and freshly ground black pepper. Simmer uncovered over medium-low heat for 20 minutes.

  • Step 8: TO COOK THE SAUSAGE:

  • Step 9: Have a roll of it in casing. Add a little water to pan prick casing so fat comes out for 10 to 15 minutes

  • Step 10: When done cut into coins

  • Step 11: TO PREPARE THE CHEESE FILLING:

  • Step 12: While the sauce and sausage are cooking, make the cheese filling.

  • Step 13: In a large bowl, combine ricotta, one cup of Parmesan, the beaten eggs, chopped parsley, sea salt and freshly ground black pepper. Set aside.

  • Step 14: TO ASSEMBLE THE LAYERS:

  • Step 15: Ladle one-third of the meat sauce into a 9"x 13"x 2" casserole

  • Step 16: Spread a ladle of sauce over the bottom of the dish.

  • Step 17: Then add approximately half the pasta (in one layer, cover the sauce with the noodles), half the sliced mozzarella, 1/2 the sausage ,half the cheese mixture, and one third of the sauce.

  • Step 18: Add another single layer of noodles, mozzarella, sausage ,ricotta and the remaining sauce.

  • Step 19: TO BAKE:

  • Step 20: Sprinkle with the remaining 1/4 cup of Parmesan on top and bake uncovered for 35 minutes, or until the sauce is bubbling.
