Ingredients

The ingredients are:
  • 1 tablespoon cooking oil (olive or vegetable)
  • 1 pound chicken breasts (3 or four breasts)
  • 1/2 cup onion (diced)
  • 1 cup masa harina (dried corn dough or corn flour)
  • 16 ounces processed cheese
  • 4 cups chicken broth
  • 1 clove garlic (minced or chopped)
  • 3 cups water
  • 1 cup enchilada sauce
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1/2 teaspoon Ground Coriander

How to Make

  • Step 1: Heat a large pot over medium heat and add oil and then place chicken breast into the pot and brown for about 5 minutes, flip chicken and repeat – set aside when done

  • Step 2: Toss the garlic and onions into the pot, stir until caramelized.

  • Step 3: Add broth.

  • Step 4: Whisk together the Masa Harina and water in a bowl then pour into the pot and add the rest of the ingredients

  • Step 5: Dice the chicken into small pieces and toss into the pot and simmer for about 45 minutes and then serve and enjoy!
