Ingredients

The ingredients are:
  • 16 ounces boneless skinless chicken breasts (4 breasts, approx 4 ounces each, flattened)
  • 2 tablespoons oil (olive oil)
  • 2 tablespoons green onion, chopped
  • 1/2 cup tomato, diced (small diced)
  • 1/2 cup red onion, sliced
  • 1 cup mushrooms, sliced (fresh)
  • 1 tablespoon fresh garlic, chopped
  • 2 tablespoons parsley, chopped
  • 1/4 teaspoon crushed red pepper
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 cup butter, divided
  • 1/4 cup lemon juice (fresh)
  • 1/2 cup dry white wine
  • 1 pound dry linguini pasta
  • Seasoned flour (for dusting)
  • FOR SEASONED FLOUR
  • 3 cups all-purpose flour
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt

How to Make

  • Step 1: Heat oil in large saute pan.

  • Step 2: Dust chicken in seasoned flour

  • Step 3: Cook chicken on both sides until brown and internal temperature is 165 degrees; remove chicken from pan and let set.

  • Step 4: Add 2 tablespoons butter to pan. Add green onion, diced tomatoes, mushrooms, garlic, chopped parsley, crushed red pepper and salt to pan; saute for 3 minutes, stirring constantly Add chicken back to pan.

  • Step 5: Add white wine, lemon juice & remainder of the butter. Allow to come to a boil.

  • Step 6: Cook pasta according to directions on box. Add drained cooked pasta to pan, toss together & serve.
