Step 1: Prepare 8 medium serving dishes. In a bowl beat the cream cheese and vanilla using an electric mixer on low speed until well combined; set aside.
Step 2: In a heat-proof bowl combine the Jello gelatin powder with boiling water and sugar mixing until no sugar and gelatin granules remain; add in the cold water and stir until thickened.
Step 3: Gradually add to the cream cheese mixture beating after each addition until well blended. Gently stir in 1-1/2 cups thawed whipped topping and the chopped strawberries.
Step 4: Divide between the dessert dishes. Refrigerate for 2 hours or until firm. Before serving dollup with more whipped topping over the top
