The ingredients are:
  • 1/4 cup baking cocoa
  • 1/4 cup oil
  • 3/4 cup applesauce
  • 1 large egg, lightly beaten
  • 1 1/4 cups all-purpose flour
  • 3/4 to 1 cup sugar
  • 3/4 teaspoon soda (if using sweetened applesace Isuggest 3/4 cup sugar)
  • 1/4 teaspoon salt
  • 1/2 to 1 teaspoon ground cinnamon
  • 3/4 cup chopped nuts
  • Crunch Topping:
  • 1 1/2 tablespoon melted butter
  • 3 tablespoons baking cocoa
  • 6 tablespoons packed light brown sugar
  • 1/3 cup chopped nuts
  • 3/4 to 1 teaspoon cinnamon

How to Make

  • Step 1: Preheat oven to 350 degrees F. Line or grease 12 regular-size muffin tins.

  • Step 2: For topping; blend together melted butter and cocoa until smooth. Stir in remaining topping ingredients; set aside.

  • Step 3: For muffins; In a bowl combine cocoa and oil mixing until smooth; mix in applesace and egg until well combined.

  • Step 4: In another bowl combine the flour with sugar, baking soda, salt and cinnamon; stir in the applesauce mixture JUST until moistened. Spoon into muffin tins 3/4 full. Sprinkle the topping over each muffin. Bake for 15-20 minutes.
