Ingredients

The ingredients are:
  • 30 ounce pork loin (trimmed of extra fat)
  • 12 ounce mushrooms (cut in half)
  • 546 grams apples (3 apples, cored diced)
  • 1 large red onion, dice
  • 2 1/2 tablespoon olive oil
  • 4 sprigs fresh thyme
  • Salt, to taste
  • Pepper, to taste
  • 1 1/2 tablespoon all purpose flour
  • 16 ounces chicken stock

How to Make

  • Step 1: Preheat the oven to 450F.

  • Step 2: Season the pork loin generously with salt and pepper.

  • Step 3: Heat a cast iron pan over high heat.

  • Step 4: Once hot, add 1 tbsp of oil and sear the the loin on all sides until golden brown.

  • Step 5: Transfer to a roasting pan and roast for 10 minutes

  • Step 6: In a bowl, combine the olive oil, onions, apples, mushrooms, and thyme.

  • Step 7: Toss it together and season with salt and pepper.

  • Step 8: Lay the apples and vegetables in the roasting pan with the pork

  • Step 9: Roast for another 15 - 20 minutes or until the vegetables are lightly golden brown and the internal temperature of the pork reaches 140F.

  • Step 10: Transfer the pork and vegetables to a serving plate to rest for 10 minutes before slicing.

  • Step 11: Place the roasting rack onto your stove top over medium heat.

  • Step 12: Add the flour and stir to combine.

  • Step 13: Slowly add in the chicken stock while stirring, and let cook for 3-4 minutes until it thickens.

  • Step 14: Serve the gravy with the pork.
