Ingredients

The ingredients are:
  • 4 (800 grams) skinless salmon fillets (bones removed, 4 x 200 grams fillets)
  • 2 carrots, thinly sliced
  • 1 bunch broccolini, trimmed and cut into 4cm lengths
  • 1 cabbage, cut into 2cm slices (a small cabbage)
  • 100 gram dried noodles (crunchy noodles)
  • FOR SESAME DRESSING
  • 1/4 cup lemon juice
  • 2 tablespoons oil (vegetable)
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon ginger paste
  • 2 teaspoons caster sugar
  • 1 green spring onion, finely chopped

How to Make

  • Step 1: To make dressing, combine all ingredients in a jug and mix well.

  • Step 2: Heat an oiled, large, non-stick frying pan over a medium to high heat and add salmon and cover with lid and cook for about 5 minutes, turning halfway, or until cooked to your liking and then remove to rest, loosely covered with foil.

  • Step 3: Wipe pan clean and return same oiled pan to a high heat and add carrots and broccolini and cover with lid and cook, stirring occasionally, for 2 minutes and then add cabbage and 2 tablespoons of the dressing and cook, stirring for a further 2 minutes, or until vegetables are tender

  • Step 4: Serve vegetables over crunchy noodles and top with salmon and drizzle with remaining dressing.
