Ingredients

The ingredients are:
  • 4 (2.20 pounds) pork loin chops (Note ~thick pork chops, about 250 grams each chop)
  • 1/3 cup soy sauce
  • 1/3 cup honey
  • 1 tablespoon brown sugar
  • 1 tablespoon olive oil
  • 1 tablespoon white vinegar
  • 2 garlic cloves, finely grated
  • 1 teaspoon ginger root (fresh, finely grated)
  • 80 grams spring onions ( (approx 4 stems, shallots), trimmed and cut into 4cm batons)

How to Make

  • Step 1: Preheat your oven to 200°C fan-forced.

  • Step 2: NOTE: Cooking time will depend on how thick your pork chops are. Time given are for an average 1 x 250 gram pork chop/.

  • Step 3: Make the soy marinade ~ by combining the soy sauce, honey, sugar, oil, vinegar, garlic and ginger in a large bowl, and when combined well add the pork and toss the pork well to coat. Set aside the pork mix for 15 minutes to marinate.

  • Step 4: Remove the pork chops from bowl and arrange them on a baking tray, reserving remaining soy marinade in the bowl. Bake the pork for 10 minutes. Remove pork chops from oven, turn pork and spoon over reserved marinade. Bake for 10 minutes further.

  • Step 5: Heat the oven grill on high or set oven to as high as possible. Remove pork from oven, arrange shallots around pork and use a pastry brush to coat pork and green onions in the caramelized tray juices. Add 1 tablespoon of water to the tray.

  • Step 6: Grill the pork or return to a hot oven for 4 minutes, brushing with tray juices after 2 minutes, watching carefully to ensure pork doesn’t burn. (If the juices in pan begin burning, add an extra tablespoon of water to the tray).

  • Step 7: Serve pork with the green onions and tray juices.
