Ingredients

The ingredients are:
  • FOR SAUCE
  • 1 cup cheddar cheese, shredded (white)
  • 1 cup Monterey Jack cheese, shredded
  • 1 tablespoon cornstarch
  • 2 tablespoons butter
  • 1 garlic clove, minced
  • 1/4 cup white onion, grated
  • 1 can (13 ounces) evaporated milk (full fat)
  • 3/4 cup tomato, finely diced
  • 1/4 teaspoon onion powder,
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 1 can(4 ounce) chopped green chiles
  • 1/4 cup cilantro, finely chopped
  • 3 tablespoon milk
  • 1/2 teaspoon salt
  • FOR SHRIMP
  • 1 tablespoons butter
  • 8 ounces mushrooms, sliced (white)
  • 1 pound shrimp, peeled
  • FOR TOPPING
  • 4 tablespoons queso fresco
  • 1 green onion, minced
  • 1 teaspoons fresh ground black pepper, to taste

How to Make

  • Step 1: Sauce:

  • Step 2: Place cheese and cornstarch in a bowl, toss to coat.

  • Step 3: Melt butter over medium heat in a large saucepan

  • Step 4: Add garlic and onion, cook slowly for 3 minutes or until onion is translucent but not browned.

  • Step 5: Add tomato (including juices) and cook for 2 minutes until tomato is slightly softened.

  • Step 6: Add evaporated milk and cheeses.

  • Step 7: Stir, then add chiles and Spices.

  • Step 8: Stir until cheese melts and it becomes a silky sauce.

  • Step 9: Add salt to taste,depends on saltiness of cheese used

  • Step 10: And stir in cilantro.

  • Step 11: Stir in milk

  • Step 12: Shrimp:

  • Step 13: Fry mushrooms

  • Step 14: Add shrimp

  • Step 15: Add to cheese sauce

  • Step 16: Plate:

  • Step 17: Put rice on plate

  • Step 18: Put hot cheese mixture on top

  • Step 19: Garnish
