Step 1: Grease a 22cm round cake pan and line base and side with baking paper, extending paper 2cm above pan edge.
Step 2: To make topping, pour butter over base of prepared pan and sprinkle with sugar.
Step 3: Cut apples into 7mm thick slices and arrange slices, slightly overlapping, in a single layer over base of pan.
Step 4: Beat butter, sugar and vanilla in a small bowl of an electric mixer until fluffy and then beat in eggs, one at a time, until combined.
Step 5: Transfer to a large bowl and add milk and combined sifted flour, cinnamon and mixed spice, in two batches, stirring until combined and then spoon over apples in pan and smooth over top.
Step 6: Cook in a moderately slow oven (160C0 for 1 hour or until a skewer comes out clean.
Step 7: Stand in pan for 20 minutes and then invert on to a serving plate.
Step 8: Sprinkle cinnamon sugar over apple topping and serve warm or cold with custard and ice-cream.
