Ingredients

The ingredients are:
  • 125 grams unsalted butter (chopped and at room temperature)
  • 1 cup brown sugar, firmly packed
  • 1 teaspoon vanilla extract
  • 3 eggs, at room temperature
  • 2/3 cup milk
  • 1 1/2 cups self-raising flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon mixed spice
  • Cinnamon sugar, to decorate
  • Custard, to serve
  • Ice-cream, to serve
  • FOR TOPPING
  • 50 grams unsalted butter (melted)
  • 1/2 cup brown sugar, firmly packed
  • 2 apples (large Granny Smith, peeled and cored)

How to Make

  • Step 1: Grease a 22cm round cake pan and line base and side with baking paper, extending paper 2cm above pan edge.

  • Step 2: To make topping, pour butter over base of prepared pan and sprinkle with sugar.

  • Step 3: Cut apples into 7mm thick slices and arrange slices, slightly overlapping, in a single layer over base of pan.

  • Step 4: Beat butter, sugar and vanilla in a small bowl of an electric mixer until fluffy and then beat in eggs, one at a time, until combined.

  • Step 5: Transfer to a large bowl and add milk and combined sifted flour, cinnamon and mixed spice, in two batches, stirring until combined and then spoon over apples in pan and smooth over top.

  • Step 6: Cook in a moderately slow oven (160C0 for 1 hour or until a skewer comes out clean.

  • Step 7: Stand in pan for 20 minutes and then invert on to a serving plate.

  • Step 8: Sprinkle cinnamon sugar over apple topping and serve warm or cold with custard and ice-cream.
