Step 1: Preheat oven to 350 degrees. Fit one pie crust into bottom of each pie plate, then then flute edges.
Step 2: In a bowl mix the eggs with cream and milk; add in lemon juice and parsley. Stir in spinach and Feta cheese, then season with salt and pepper. Divide the mixture between the two pie plates. Sprinkle the top with 1/3 cup Parmesan cheese.
Step 3: Place the pie plates onto a baking sheet. Bake in for 35-40 minutes or until a knife inserted in center comes out dry. Cool for 10 minutes before serving. Can also be served at room temperature.
