Ingredients

The ingredients are:
  • 10 ounces spinach, frozen (thawed then chopped, cooked according to package directions then hand-squeeze to remove any excess moisture)
  • 4 eggs, large
  • 3/4 cup cream (35%)
  • 1 1/4 cups milk
  • 2 tablespoons lemon juice
  • 3 tablespoons parsley, fresh (minced)
  • 1 1/4 cups feta cheese, crumbled
  • Seasoned salt and fresh ground black pepper, to taste (use lots black pepper!)
  • Pie crust (two crusts, for two 9-inch deep-dish pie plates)
  • 2/3 cups Parmesan cheese fresh grated (divided)

How to Make

  • Step 1: Preheat oven to 350 degrees. Fit one pie crust into bottom of each pie plate, then then flute edges.

  • Step 2: In a bowl mix the eggs with cream and milk; add in lemon juice and parsley. Stir in spinach and Feta cheese, then season with salt and pepper. Divide the mixture between the two pie plates. Sprinkle the top with 1/3 cup Parmesan cheese.

  • Step 3: Place the pie plates onto a baking sheet. Bake in for 35-40 minutes or until a knife inserted in center comes out dry. Cool for 10 minutes before serving. Can also be served at room temperature.
