Step 2: Drain and mash.
Step 3: Add cream cheese, stirring until combined.
Step 4: Gently stir in sour cream, mustard, salt, pepper
Step 5: Lightly grease and pam spray a 2-quart square baking dish;
Step 6: Spoon potato mixture into prepared dish.
Step 7: Bake casserole, uncovered, in the preheated oven for 30 minutes or until heated through.
Step 8: Top with bacon and, if desired, chives.
