Ingredients

The ingredients are:
  • 820 grams peaches, sliced (slices in juice, canned)
  • 1/4 cup brown sugar, firmly packed
  • 2 tablespoons water
  • 2 tablespoons water
  • 1 teaspoon vanilla bean paste
  • TO SERVE
  • Vanilla ice-cream
  • Flaked almonds (toasted)
  • FOR TOPPING
  • 1 1/4 cups self-raising flour
  • 1/2 cup brown sugar, firmly packed
  • 100 grams unsalted butter (cold and finely chopped)
  • 1/3 cup buttermilk
  • 1/3 cup almonds, flaked

How to Make

  • Step 1: Lightly grease four ovenproof mugs (1 cup capacity) and place on an oven tray.

  • Step 2: Drain peaches through a sieve over a bowl and reserve a quarter cup of the juice.

  • Step 3: Pat peaches dry with absorbent kitchen paper and divide among prepared mugs.

  • Step 4: Place reserved juice in a medium jug with sugar, water and vanilla and mix well and pour evenly over the peaches.

  • Step 5: To make topping, place flour in a large bowl and stir in sugar and then add the butter and using your fingertips, rub butter into flour until mixture resembles breadcrumbs and then add buttermilk and almonds and stir until mixture just comes together (Do not over-mix).

  • Step 6: Spoon topping evenly over peaches and cook in a moderate oven (180C) for about 30 to 35 minutes or until golden brown and topping is cooked.

  • Step 7: Remove from oven and stand for 5 minutes and serve hot cobblers with ice cream and sprinkle with toasted almonds.
