Ingredients

The ingredients are:
  • 5 ounces semisweet chocolate (pieces or other good quality Belgian chocolates such as Callebaut callers)
  • 1 cup heavy whipping cream
  • 6 tablespoons caster sugar (superfine)
  • 2 eggs, separated, room temperature
  • Chocolate curls or sprinkles, optional garnish

How to Make

  • Step 1: In a double boiler or using a heatproof bowl over a pan filled with water. Bring the pan with water or the bottom of a double boiler to a boil; remove from heat and then place the top of the double boiler or heatproof bowl on top. Fill the top pan or bowl with the chocolate and leave it until melted; stirring occasionally. Remove top pan or bowl and let cool at room temperature.

  • Step 2: In a clean bowl whip the cream with 1 tablespoon of the sugar until soft peaks form. Set aside.

  • Step 3: In a separate bowl whisk the egg whites, gradually adding 4 tablespoons of sugar until stiff.

  • Step 4: In another bowl whisk the egg yolks, adding in the last of the sugar (1 tablespoon) until foamy and then fold the egg yolks into the chocolate mixture.

  • Step 5: Fold in the whipped cream and then the egg whites.

  • Step 6: Spoon the mousse into ramekins and put in the refrigerator for at least one hour to set. Serve as is or with whipped cream and/or chocolate curls or other decorations.
