Ingredients

The ingredients are:
  • 200 grams hazelnuts (1 1/2 cups)
  • 4 eggs
  • 200 grams sugar (1 cup)
  • 150 grams butter, softened (10 1/2 Tbls)
  • 200 grams unbleached all purpose flour (1 2/3 cup)
  • 1 tablespoons olive oil
  • 1 teaspoons vanilla extract
  • 2 teaspoons baking powder
  • Confectioners sugar for dusting , optional

How to Make

  • Step 1: Preheat ove to 350 F or 180 C

  • Step 2: Butter and flour a 8" or 9" cake pan

  • Step 3: Toast hazelnuts in the oven 8-10 minutes, let cool and then rub with a dish towel to remove as much skin as possible. Chop finely in a food processor (you can also use a blender but it can be a little trickier)

  • Step 4: In a bowl , beat the sugar and butter briefly , add in the eggs, then follow with the rest of the ingredients.

  • Step 5: Mix well until smooth and uniform, without lumps.

  • Step 6: Pour into prepared pan, bake 40 minutes but start check at 30 if you go with the 9" pan. Use standard method for checking doneness.
