Ingredients

The ingredients are:
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil (extra-virgin)
  • 3 1/2 cups thinly sliced onions (about 2 medium)
  • Salt to taste
  • 1 teaspoon hot paprika
  • 1 cup sour cream
  • 5 ounces cream cheese (at room temperature)
  • 1/4 cup mayonnaise
  • 1 tablespoon red wine vinegar
  • 2 scallions, thinly sliced
  • Cayenne pepper, pinch
  • Grilled bread, for serving

How to Make

  • Step 1: In a large skillet over medium heat, heat the butter and olive oil until the butter melts completely. Add the onions and season with salt and the paprika. Cook stirring occasionally, until the onions are browned and start to caramelize, about 15 to 20 minutes. Lower the heat and continue to cook, stirring occasionally, until the onions are browned and tender but not falling apart, 15 to 20 more minutes. Transfer the onions to a baking sheet to cool.

  • Step 2: In a large bowl add the sour cream, cream cheese, mayonnaise and vinegar. With a hand mixer, mix ingredients until smooth. Stir in three-quarters of the caramelized onions, three-quarters of the scallions and the cayenne pepper. Taste and adjust the seasoning with salt.

  • Step 3: Transfer the dip to a serving bowl and top with the remaining caramelized onions and scallions. Serve with grilled bread.
