Ingredients

The ingredients are:
  • 2 cups plain flour
  • 3/4 cup brown sugar
  • 1 1/2 cups pecan nuts
  • 175 grams unsalted butter (melted)
  • 2 tablespoons golden syrup
  • FOR FILLING
  • 250 grams cream cheese (chopped, room temperature)
  • 1/3 cup caster sugar
  • 2 teaspoons vanilla bean paste
  • 1 egg

How to Make

  • Step 1: Grease an 18cm x 28cm rectangular slice pan and line the base and sides with baking paper, extending paper 3cm above pan edges.

  • Step 2: Process flour, sugar and ½ cup of the pecans in a food processor until nuts are finely chopped and add butter and golden syrup and pocess until combined. Remove.

  • Step 3: Remove and reserve 1 cup of mixture and press remaining mixture over base of prepared pan.

  • Step 4: Cook in a moderate oven (180C) for about 15 minutes, or until golden and then remove and cool.

  • Step 5: To make filling, process cream cheese, sugar and vanilla in same, clean food processor until smooth and then add egg and process until combined and then pour over base and spread evenly.

  • Step 6: Coarsely chop remaining nuts and stir into reserved mixture and sprinkle over filling.

  • Step 7: Cook in a moderately slow oven (160C) for about 30 minutes, or until golden brown and filling is just set and then remove and cool in pan on a wire rack and then refrigerate for 4 hours, or overnight until firm.

  • Step 8: Lift slice from pan and cut into squares to serve.
