Step 1: To make Cajun rub, combine all ingredients in a large bowl.
Step 2: Trim and discard any excess fat from ribs and then cut between every second rib to separate into smaller portions and add to large bowl, then use your hands to apply rub over ribs and then arrange in a single layer in a large roasting and pour over water and then cover tightly with foil.
Step 3: Cook in a moderately slow oven (160C) for about 1 hour and 30 minutes, or until tender.
Step 4: Meanwhile, make glaze - whisk all ingredients in a large bowl and season with salt and pepper and add warm ribs and toss to coat.
Step 5: Heat a well-oiled barbecue grill plate over a medium heat and add ribs in two batches and cook for about 4 minutes on each side, or until charred.
Step 6: Serve ribs with rocket.
