Ingredients

The ingredients are:
  • 1 pound lean ground beef
  • 1 medium onion, chopped
  • 1 cup peas, preferabley frozen
  • 1/2 cup corn kernels, preferably frozen
  • 12 cup carrot rings, cooked
  • 2 garlic cloves, smashed
  • 1 cup beef gravy (leftover or make some out of beef broth and cornstarch)
  • 2 teaspoons dry mustard
  • 2 tablespoons tomato paste
  • 1 tablespoon water
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper, freshly ground
  • 2 cups mashed potatoes, with garlic
  • 1 cup sharp cheddar cheese, shredded
  • 2 tablespoons Parsley , chopped for garnish (optional)

How to Make

  • Step 1: Preheat ove to 400f degrees. Scramble fry the ground beef with the onion, in a cooking oil sprayed frypan until no longer pink and the onion is softened and lightly caramelized. Add the frozen peas and corn with the cooked carrot rings and garlic, as the frozen veggies defrost stir and simmer for 5 minutes.

  • Step 2: Add the gravy, dry mustard,tomato paste, water, salt and pepper, simmer for a further 10 minutes Pour the meat mixture into a casserole.

  • Step 3: Evenly spread the mashed garlic potatoes over the top and sprinkle with shredded cheese. Sprinkle with parsley if using.

  • Step 4: Place the casserole on the middle rack of the oven and bake for 30 minutes or until the cheese is melted and bubbling around the edges.
