Ingredients

The ingredients are:
  • 175 grams unsalted butter (finely chopped)
  • 1/2 cup golden syrup
  • 3/4 cup milk
  • 2 eggs, lightly beaten
  • 1 1/4 cups plain flour
  • 3/4 cup self-rising flour
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon bicarbonate of soda
  • 1/4 cup brown sugar, firmly packed
  • FOR FROSTING
  • 100 grams unsalted butter (chopped, at room temperature)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups icing sugar
  • 1 tablespoon milk
  • Pink food colouring, to tint

How to Make

  • Step 1: Grease a 14cm x 24cm large loaf pan and line the base and sides with baking paper, extending paper 4cm above pan edges.

  • Step 2: Place the butter and syrup in a small saucepan over a medium heat and stir until butter is melted.

  • Step 3: Remove and let stand for 15 minutes.

  • Step 4: Whisk the milk and eggs in a jug until combined.

  • Step 5: Sift combined flours, spices and soda into a large bowl and stir in sugar and then make a well in the centre and add milk mixture and butter mixture and whisk until smooth and pour into prepared pan.

  • Step 6: Cook in a moderately slow oven (160C) for about 1 hour, or until a skewer inserted into the centre of the cake comes out clean. Stand in pan for 15 minutes and then transfer to a wire rack to cool completely.

  • Step 7: To make frosting, beat butter and vanilla in small bowl of an electric mixer until pale and creamy and gradually beat in the sugar until smooth and then beat in milk.

  • Step 8: Transfer half the frosting to a separate bowl and tint pink with colouring.

  • Step 9: Dollop white and pink frostings over the top of loaf and using a small spatula, gently swirl frostings together to create a marbled effect.

  • Step 10: Serve cut into slices.
