  • 1 cup jicama (diced)
  • 1 cup carrots (matchstick)
  • 1 cup radish, thinly sliced
  • 2 tablespoons balsamic vinegar (golden)
  • 1/4 cup olive oil
  • 1/2 teaspoon coriander
  • 1 teaspoon chili powder
  • 1 tablespoon lime zest
  • 1 teaspoon salt

How to Make

  • Step 1: Place jicama, carrots and radishes in serving bowl, in separate, smaller bowl, whisk vinegar and slowly add oil to create emulsion. Add coriander, chili powder, lime zest and salt; whisk until combined. Pour vinaigrette over vegetables and mix well. Serve, refrigerating any leftovers.
