Ingredients

The ingredients are:
  • 1 large (1.4 kilogram) cauliflower
  • 1/4 cup olive oil
  • 2 teaspoons ground cumin
  • 2 teaspoon sweet paprika
  • 2 teaspoons sea salt
  • 2 whole lemons (halved)
  • Parsley leaves, chopped to garnish
  • Greek yoghurt, to serve

How to Make

  • Step 1: Remove outer green leaves from cauliflower and trim the base to sit flat and place whole cauliflower in an oiled roasting pan.

  • Step 2: Combine oil, cumin, paprika and salt in a small bowl and then rub all over cauliflower and cook uncovered, in a moderate oven (80C) for about 1 hour or until golden and tender.

  • Step 3: Remove from the oven and transfer cauliflower to a serving plate.

  • Step 4: Squeeze lemon halves over whole or thickly sliced cauliflower.

  • Step 5: Garnish with parsley and serve with yoghurt.
