  • 1 1/2 cups granulated sugar
  • 3/4 cup oil (canola oil)
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 3 medium bananas (ripe, mashed about 1 1/2 cup)
  • 3 cups all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/2 cups pecans, chopped
  • 1 cup candied cherries, chopped
  • 1/2 cup candied pineapple, chopped

How to Make

  • Step 1: Preheat oven to 350 degrees F. In a large mixing bowl beat together sugar and oil. Beat in eggs and vanilla. Add bananas and mix to combine.

  • Step 2: In a medium bowl add the flour, salt, and baking powder stirring together well. Mix dry and wet ingredients until just blended. Fold in pecans, cherries, and pineapple.

  • Step 3: Grease two 8 x 4 inch loaf pans and divide batter evenly when pouring. Bake for 50 to 60 minutes or until golden brown and when a toothpick is inserted it comes out clean. Leave in pans for 10 minutes then remove and place on wire racks to cool.
