Ingredients

The ingredients are:
  • 2 pounds dried beans
  • 1 teaspoon baking soda
  • 1 pound salt pork
  • 1 onion
  • 8 tablespoons sugar
  • 2/3 cup molasses
  • 2 teaspoons dry mustard
  • 4 teaspoons salt
  • 1/2 teaspoon pepper

How to Make

  • Step 1: Soak beans overnight.

  • Step 2: Parboil Beans for ten minutes with the baking soda.

  • Step 3: Run cold water through the beans in a strainer.

  • Step 4: Peel onion but leave it whole.

  • Step 5: Dice rind of salt port in one half inch squares.

  • Step 6: Put half of the pork to the bottom of bean pot with the onion.

  • Step 7: Add beans,.

  • Step 8: Put the rest of the pork on top.

  • Step 9: Mix other molasses, mustard, salt and pepper with 1 cup hot water. Pour over beans.

  • Step 10: Put in 300F oven for six hours.

  • Step 11: Add water to pot as necessary, to keep the beans moist. Be careful not to flood the beans.
