  • 1 can (15.8 ounce) black-eyed peas (rinsed and drained)
  • 1/2 cup red onion, diced
  • 1/2 cup diced tomato (seeded)
  • 1/2 cup diced green bell pepper
  • Curly leaf lettuce leaves (optional)
