  • 2 ounces dry linguine pasta
  • 1/2 cup shredded carrot
  • 1/2 pound shrimp (medium shrimp, cooked and peeled)
  • 1 cup thinly sliced lettuce leaves (Boston)
  • 1/4 cup cilantro (fresh, leaves)
  • 2 tablespoons peanuts, chopped (unsalted, dry roasted)
  • 1/4 cup fresh lime juice
  • 2 tablespoons chopped cilantro (fresh)
  • 1 tablespoon chopped green onions
  • 2 tablespoons fish sauce
  • 2 1/2 teaspoons sugar
  • 2 teaspoons oil (vegetable oil)
  • 1 teaspoon grated ginger root (peeled, fresh)
  • 2 garlic cloves, minced

How to Make

  • Step 1: Bring 4 cups water to a boil in a large saucepan. Add pasta, and cook 9 1/2 minutes. Add carrot; cook an additional 30 seconds. Drain; rinse under cold water. Drain; let cool. Combine pasta mixture, shrimp, lettuce, cilantro, and peanuts in a large bowl; toss well. Combine lime juice and next 7 ingredients in a small bowl; stir well with a whisk. Pour over pasta mixture; toss gently to coat.

  • Step 2: Serving size is 2 cups.
