Ingredients

The ingredients are:
  • FOR SALAD
  • 1 bag (12 ounce) mixed greens (crisp salad greens, Dole's "American blend" works well)
  • 1 small red onion, cut in half and then sliced into thin half-rings
  • 1/2 cup black olives (whole)
  • 6 pepperoncini peppers (small peppers, the jarred variety works well)
  • 1/2 cup croutons (I prefer the buttery garlic variety, but use what you prefer)
  • 2 Roma tomatoes (small tomatoes, halved and then each half cut into thick slices)
  • 1/2 cup Parmesan cheese, shredded (fresh)
  • FOR SIGNATURE ITALIAN SALAD DRESSING
  • 1/2 cup low-fat mayonnaise
  • 1/3 cup white wine vinegar
  • 1 teaspoon olive oil
  • 2 tablespoon Parmesan cheese, shredded (fresh)
  • 1 clove garlic, minced
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon dried parsley flakes
  • 1 Tablespoon lemon juice
  • 1 teaspoon salt
  • 3/4 teaspoon black pepper
  • 1 to 2 teaspoon sugar (optional)
  • Garnish
  • 2 to 4 tablespoon grated Romano cheese
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: FOR THE DRESSING - Mix salad ingredients (mayonnaise through black pepper) in a blender until well mixed (approximately 30 seconds). If this is a little too tart for your own personal tastes, stir in a little sugar. Chill in the refrigerator for at least 30 minutes.

  • Step 2: FOR THE SALAD - Chill a large glass salad bowl in the freezer for at least 30 minutes.

  • Step 3: Place the bag of salad greens in the chilled salad bowl. On top of the lettuce, add the red onions, black olives, pepperoncinis, croutons, tomatoes and Parmesan cheese. Top with the salad dressing (which you might not need to use all of the salad dressing). Toss gently until ingredients are coated with the dressing, leaving lots of vegetables on top. Chill until ready to serve.

  • Step 4: Serve chilled. Garnish with a bit of fresh Romano cheese grated on top of each serving, if desired.
