Step 1: Grease an eight hole mini load pan (2/3 cup capacity).
Step 2: Combine sifted flour and sugar in a large bowl.
Step 3: Place butter, eggs and buttermilk in a jug and whisk well to combine and then add to flour mixture and mix with a wooden spoon until combined (don't overbeat the mix).
Step 4: Cut unpeeled apples into quarters and remove core and shop apples into 1cm pieces and toss in a bowl with lemon juice and cinnamon sugar.
Step 5: Stir in half the apples pieces into cake batter and then divide batter evenly among prepared pan holes and then top with remaining apple and sprinkle evenly with muesli and dust with extra cinnamon sugar and then cook in a moderate oven (180C) for about 25 minutes, or until cooked with a skewer inserted into the centre comes out clean.
Step 6: Stand in pan for 5 minutes before turning out on a wire rack to cool.
Step 7: Serve loaves with warm or cold with Greek yoghurt and maple syrup.
Step 8: TIP - apples can be replaced with pears and chopped walnuts, or pecans can be used instead of muesli. Loves can be made up to three day ahead and stored in an airtight container, or freeze for up to one month.
