Ingredients

The ingredients are:
  • 2 pints cottage cheese
  • 1/2 cup sour cream
  • 2 tablespoons butter, soft
  • 2 egg yolks
  • 1 tablespoon lemon peel, grated
  • 1/2 cup almonds, chopped
  • 1 cup sugar
  • 1 cup raisins
  • Whipped cream, to serve
  • Fruit, to serve

How to Make

  • Step 1: Force the cottage cheese through a strainer or (easier) process in a blender until smooth. Add the next 3 ingredients (-egg yolks), whirl in blender combining well or mix in a bowl if using the strainer option. Sri in next 4 ingredients (-raisins) and mix until blended.

  • Step 2: (Interesting step for kids) -- Wash a clay flower pot (needs to be the type with a hole in the bottom) that is at least 6 inches deep and line the flower pot with several layers of cheese cloth. Press the pasha mixture into the lined pot and place a weight on top. Set on a pack in a pan to catch the liquid that will drain off and put in the refrigerator for at least one day (but it will be better if allowed to set for 2-3 days) -- removing any dry spots.

  • Step 3: Unmold on a serving plate and remove the cheesecloth carefully.

  • Step 4: Garnish with whipped cream and fruit and serve with additional whipped cream and fruit to spoon over individual servings.
