  • 3 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 3/4 cups sugar
  • 12 tablespoons butter, softened
  • 3 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon lemon zest
  • 1 cup buttermilk
  • 1/3 cup powdered sugar

How to Make

  • Step 1: Preheat the oven to 350 degrees.

  • Step 2: Coat 18 mini bundt cups with cooking spray.

  • Step 3: Combine flour, baking powder, baking soda and salt in a bowl. Stir with a whisk to combine.

  • Step 4: Place sugar and 12 tablespoons butter in a large bowl; beat with a mixer a medium speed until well blended. Add the eggs, one at a time, beating well after each addition. Beat in vanilla and lemon zest.

  • Step 5: Add the flour mixture and buttermilk alternately to the butter mixture, beginning and ending with the flour mixture.

  • Step 6: Spoon the batter into the prepared pans. Bake at 350 degrees for 18 minutes or until a wooden pick inserted in the middle comes out with moist crumbs clinging.

  • Step 7: Cool for 5 minutes in the pan on a wire rack. Remove from the pan.

  • Step 8: Dust the tops of the cake with powdered sugar. Enjoy! Alternately, freeze some of the cakes and wait to top with the powdered sugar when serving.
