Ingredients

The ingredients are:
  • 1 cup corn, creamed
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground cumin
  • 1 lime, juice of
  • Sea-salt flakes, to season
  • Freshly ground black pepper, to season
  • 400 grams cooked crabmeat (1 cup was specified)
  • 1/2 carrot, finely diced
  • 1/4 red onion, finely diced
  • 1 clove garlic, minced
  • 1 cup watercress sprigs
  • 1/4 bunch dill
  • 2 tablespoons pine nuts (toasted, chopped)
  • 1 tablespoons olive oil (extra virgin)

How to Make

  • Step 1: Put corn, paprika, cumin and lime juice in a blender and puree until smooth and then season, to taste.

  • Step 2: Toss crab meat, carrot, onion, garlic, watercress, dill and pine nuts in a large bowl and season with salt.

  • Step 3: Spread corn mixture on plates, top with crab mixture, then drizzle with oil.
