Ingredients

The ingredients are:
  • 400 grams tomatoes, chopped (medley mix specified)
  • 1/2 red onion, finely chopped
  • 1/2 cup torn basil leaves
  • 1 small red chilli, deseeded, finely chopped
  • 1 tablespoon white wine vinegar
  • 2 tablespoon olive oil
  • Salt, to taste
  • Pepper, to taste
  • 320 grams asparagus, trimmed (1 bunch specified)
  • 120 grams multigrain sourdough bread (4 thick sliced specified)
  • 1/3 cup aioli
  • Extra aioli, to serve

How to Make

  • Step 1: Combine tomatoes, onion, basil, chilli, vinegar and half the oil in a medium bowl and season with salt and pepper.

  • Step 2: Toss asparagus in remaining oil in a medium bowl and season with salt and pepper.

  • Step 3: Heat a grill plate over a medium to high heat and add asparagus and cook, turning occasionally, for about 5 to 7 minutes or until just tender.

  • Step 4: Remove and cover to keep warm.

  • Step 5: Cook bread on same grill plate for about 2 minutes on each side, or until toasted.

  • Step 6: Spread aioli over toast and top with asparagus and tomato mixture and serve with extra aioli.
