Ingredients

The ingredients are:
  • 1 to 2 tablespoons oil
  • 120 grams boneless skinless chicken breast (cut into bite sized pieces I use 2 cups)
  • 3/4 to 1 cup onion, diced
  • 1 cup carrots, sliced
  • 3/4 cup celery chopped
  • 2 cloves garlic minced (or to taste)
  • 6 cups chicken broth
  • 1 teaspoon dry ginger powder (I use 1 teaspoon fresh grated ginger)
  • 1 teaspoon ground turmeric
  • 1/2 to 1 teaspoon rosemary (or to taste)
  • 1/2 to 1 teaspoon thyme (or to taste)
  • 1/2 teaspoon salt ( I use sea salt
  • 1/2 teaspoon black pepper (freshly ground - I use more)
  • 3/4 cup barley

How to Make

  • Step 1: In a large soup pot on medium heat add oil, saute diced chicken, add in onion, carrots, celery and garlic, saute stirring until onions have softened

  • Step 2: Add in the spices saute half a minute, add in the chicken broth and barley, stir reduce heat to low simmer until vegetables and barley are fully cooked.
