Ingredients

The ingredients are:
  • 250 grams white chocolate and macadamia cookies
  • 1/3 cup macadamia nuts (honey-roasted macadamia nuts, 60g, chopped)
  • FOR FILLING
  • 300 ml thickened cream
  • 125 grams cream cheese (chopped, at room temperature)
  • 1/2 cup lemon curd

How to Make

  • Step 1: To make filling, pour 1/4 cup of the cream into a small bowl of an electric mixer and reserve remaining cream and refrigerate.

  • Step 2: Add cream cheese and lemon curd to cream in bowl and beat until soft peaks form and then refrigerate, covered, for 30 minutes.

  • Step 3: To assemble, spread 2 tablespoons of filling onto a serving plate into a 3cm x 30cm rectangle.

  • Step 4: Sandwich two biscuits together with 1 tablespoon filling and stand upright on its edge in the filling at one end of the plate.

  • Step 5: Working with one biscuit at a time, spoon 1 tablespoon of filling over one side and then sandwich against biscuit on plate. Repeat with remaining biscuits and filling to form a log-shape.

  • Step 6: Beat remaining cream in same clean bowl of electric mixer until soft peaks form and then spread over top and sides of log to cover completely.

  • Step 7: Cover loosely with plastic wrap and refrigerate overnight.

  • Step 8: Just before serving, sprinkle macadamias over log and cut diagonally into 3cm-thick slices.

  • Step 9: TIP - you can use your favourite plain sweet biscuits to make this treat and for a change try decorating with sliced strawberries.
